Luncheon Chef Finbar Kinsella is a native of Dublin, Ireland, and a veteran of the Louisville dining scene. He received his culinary degree from the City and Guilds Institute of London, Waterford Regional College in Waterford, Ireland.
After graduating in 1982, Finbar was head chef at Kytler's Inn in Kilkenny, reputed to be Ireland's oldest inn. He also worked as assistant executive chef at the Old Dublin Inn in Dublin, which specialized in Scandinavian and Russian cuisines.
In 1985, after moving to America, he served as sous chef at two of Louisville's best restaurants, Vincenzo's and Equus. After six years in those two restaurants, Finbar came to Lilly's, where he is now the executive chef for luncheon. In addition to helping Lilly's achieve its continuing Mobil four-star rating, he has also accompanied Kathy Cary to cook at New York's James Beard House on five separate occasions. The latest was in June, 1999, when he was featured at the Beard House as part of "The Trio from Lilly's," along with Kathy Cary and Josh Lococo. Finbar does not limit his specialties to any particular items, and is currently excited about Asian foods, especially Vietnamese, Korean, Thai, Pacific Rim, and Indian dishes.
He still has his fans back in Ireland -- including his father John Kinsella, former head of music for Ireland's RTE, the Irish counterpart to the BBC. Mr. Kinsella is also one of Ireland's greatest contemporary composers, acclaimed for his seven symphonies, among other classical works. Finbar performs his own classical magic each midday at Lilly's.
