Carmelized Onion Pudding

Celebrated in "Southern Living," this Lilly's creation is a garden-cousin to corn pudding

 

 


 

Carmelized Onion Pudding

6 cups onions, sliced thinly
8 Tbsp. butter
6 eggs
2 cups heavy cream
4 Tbsp. sugar (or less, to taste)
2 tsp. salt
2 tsp. baking powder
3 Tbsp. flour

Preheat oven to 350 degrees.

Melt butter in a skillet, add the onions and cook over medium heat to caramelize. Remove from the heat when they have reached a deep brown color.

In a bowl, beat the eggs; slowly add the cream, sugar, salt, baking powder and flour. Mix well. Stir into the onion-butter mixture.

Pour into a buttered 9" x 13" pyrex dish. Bake at 350 degrees for 45 minutes.

Serves 8 to 10.
